Abstract
Procedimiento de fabricación de gelatina de origen marino y producto así obtenido. Fabricación de gelatinas a partir de pieles de animales marinos y de restos de tejido conectivo procedente de las fascias y músculo, mediante diversas etapas de elaboración. A partir de someter las pieles y/o tejido conectivo a varios lavados mediante una fuerte agitación en una solución de cloruro sódico en frío, se trata con un álcali diluido, procediendo a continuación a una neutralización y lavado con agua. El tratamiento con ácido orgánico es fundamental importancia siendo interesante la aplicación de ácido acético o láctico para obtener unas elevadas propiedades reológicas y rendimiento. Tras un lavado se procede a la extracción de la gelatina en agua mediante tratamiento térmico. El posterior secado se realizará mediante calor, atomización o liofilización. A este material proteico se incorporan de diversos compuestos para constituir el producto final o gelatina.Manufacturing procedure for gelatin of marine origin and product thus obtained. After washing, the gelatin is extracted in water by heat treatment. The subsequent drying will be carried out by heat, atomization or lyophilization. Various compounds are incorporated into this protein material to constitute the final product or gelatin.
