Abstract

Congelación de productos cárnicos. Se congelan productos cárnicos en tal medida que el agua presente en ellos se congela para facilitar su seccionado en lonchas, subsiguiente procesado, envasado u otra manipulación de los productos cárnicos. La congelación se lleva a cabo en etapas secuenciales. En la primera etapa de refrigeración se pone en contacto el producto con una salmuera de cloruro de sodio a una temperatura por debajo del punto de congelación del agua. El producto alimenticio pre- congelado resultante se somete a una segunda etapa de refrigeración con una salmuera de cloruro de calcio que está a una temperatura más baja que la salmuera de cloruro de sodio y que reduce más la temperatura de la parte central interna del producto alimenticio a bastante por debajo del punto de congelación del agua.
