Abstract

Prensa y método para tratamiento de productos cárnicos. El método consiste en someter a un producto cárnico (10) y a una cantidad de sal (9) a un prensado forzado que facilita y mejora la absorción de la sal (9) por el producto cárnico (10). Este prensado se efectúa preferentemente mediante una prensa dotada de un chasis (1, 2 y 3) con medias de guiado (6 y 7) de un plato apisonador (5) provisto de un pistón hidráulico (4), de manera que éste plato (5) puede presionar durante el tiempo y con la fuerza que se desee sobre el contenido de sal (9) y piezas cárnicas (10) existentes en un recipiente (8).
