Abstract

Procedimiento para separar de forma selectiva, según su tamaño, los glóbulos grasos presentes en un medio alimenticio o biológico, que consiste en someter el medio a tratar a por lo menos una microfiltración tangencial sobre membrana que tiene un umbral de corte comprendido entre 1,8 y 10 microm en unas condiciones de presión transmembranaria sensiblemente uniforme y en recuperar el retenido y el filtrado obtenidos.
