SE DESCRIBE UN METODO PARA LA DETERMINACION DE ACIDO LACTICO EN MATERIALES ORGANICOS DE INTERES ALIMENTICIO QUE IMPLICA REACCIONAR EN UN MEDIO ACUOSO ESTABILIZADOR UNA MUESTRA DE DICHOS MATERIALES, O UNA DISOLUCION OBTENIDA DE SU EXTRACCION, CON UN SISTEMA ENZIMATICO QUE COMPRENDE L(+) OXIDASA DE LACTATO, D(-) DESHIDROGENASA DE LACTATO Y PEROXIDASA DE RABANO BLANCO Y LA MEDICION DE LA CONCENTRACION DEL OXIGENO PRODUCIDO COMO RESULTADO DE LA OXIDACION DEL ACIDO LACTICO CONTENIDO EN DICHA MUESTRA CON UN ELECTRODO AMPERIMETRICO QUE ES SELECTIVO PARA EL OXIGENO.
