Abstract

Procedimiento para la obtención de pinitol a partir de extractos de algarroba, mediante las etapas de inversión de la sacarosa contenida en dichos extractos a fructosa y glucosa, posterior separación cromatográfica del pinitol mediante resinas de intercambio iónico, para obtener una disolución de pinitol en agua, y separación del pinitol de dicha disolución.
