Abstract

Aditivo alimentario para el tratamiento de la superficie y conservación de moluscos bivalvos frescos, que consiste en la mezcla homogénea de: ácido ascórbico o sus sales; ácido cítrico; citrato sódico u otra sal de ácido cítrico; fosfato monosódico u otra sal de fosfato de sodio; fosfato monopotásico u otra sal de fosfato de potásico; fosfato monocálcico u otra sal de fosfato de calcio; fosfato mono magnésico u otra sal de fosfato de magnesio; un difosfato de sodio, potasio o calcio; trifosfato pentasódico o pentapotásico; polifosfato sódico, potásico o doble de sodio y calcio; D-sorbitol o cualquier otro poliol; carbonato de magnesio; dióxido de silicio y cloruro sódico en cantidades adecuadas, formando una mezcla que se distribuye por la superficie de los bivalvos a tratar.
