Abstract
Procedimiento de preparación de crustáceos y dispositivo que permite la puesta en práctica de dicho procedimiento. Procedimiento de preparación de crustáceos, en particular bogavantes o langostas, caracterizado por la sucesión de las etapas siguientes: se someten los crustáceos a congelación a una temperatura del orden de -25°C; se cortan los crustáceos en dos en sentido longitudinal; se extraen las vísceras en estado sólido mediante perforación con el fin de separarlas de la parte consumible, controlando que la temperatura de los crustáceos no suba por encima de -18°C; y se almacenan los crustáceos desviscerados en una cámara fría a una temperatura del orden de - 18°C a -25°C.
