Abstract
Envase de comida preparada (1), que consiste en una bandeja (2) que contiene los alimentos envasados (16) y en una tapa (4) que cierra la bandeja, y en el cual la tapa por lo menos del envase está hecha de cartón revestido de polímero, en el cual los alimentos (16) son cocidos en la bandeja (2) y caracterizado porque los bordes (9) de la tapa (4), mediante la cual la bandeja ha sido cerrada después de la cocción, son plegados debajo de la pestaña de reborde (6) de la bandeja y son termosellados en la superficie inferior (11) de la pestaña de reborde mediante el revestimiento de polímero (14) de la tapa.
Description
Envase alimentario listo para usar y
procedimiento de fabricación.
La invención se refiere a un envase de comida
preparada, que consiste en una bandeja que contiene alimentos
envasados y una tapa para cerrar la bandeja, en el cual la tapa por
lo menos del envase está hecha de cartón revestido de polímero. La
invención se refiere también a un procedimiento para fabricar tal
envase preparado y al uso de la bandeja en la fabricación del
envase.
Al revestir con polímero un material de envasado
utilizado en un envase de comida preparada, se proporcionan a las
superficies interiores del envase propiedades de repelencia al agua
y de resistencia a la grasa. El efecto protector del revestimiento
es importante, especialmente en un envase de cartón, ya que, de no
ser así, éste se humedecería y cedería a causa de la humedad
absorbida a través de los alimentos. Si la capa de polímero del
cartón es termosellable, el envase puede ser sellado herméticamente
contra el vapor de agua y/o el oxígeno, dependiendo de las
propiedades de barrera del revestimiento, a fin de incrementar
sustancialmente la conservación de los alimentos y extender la
fecha de caducidad del envase.
La solicitud de patente DE 3 940 161 describe un
envase alimentario de un modelo de bandeja que está hecho de cartón
revestido de polímero y que está cerrado con una tapa sellada. El
envase está destinado principalmente a la esterilización en
autoclave y se afirma además que es adecuado para ser calentado en
un horno microondas antes de consumir el alimento. La tapa del
envase puede estar hecha enteramente de plástico o de cartón
revestido de polímero en ambos lados, estando las capas de
revestimiento extendidas sobre los bordes del cartón a fin de
formar un reborde, donde la tapa es sellada sobre la pestaña de
reborde de la bandeja. En ambos casos, el reborde de plástico de la
tapa está plegado encima de la arista cortante del borde de la
bandeja contra la superficie inferior de la pestaña de reborde, de
tal modo que la superficie de borde, denominado borde fresado sin
desbarbar del cartón de la bandeja quede protegida contra la
absorción de humedad que se genera dentro de un autoclave.
La solicitud de patente DE 3 940 162 también
describe un envase alimentario que tiene la forma de una bandeja
con una tapa, que está destinado a ser calentado y en el cual tanto
la bandeja como la tapa están hechas de cartón revestido de
polímero, ver en particular la figura 21 de la publicación. Como que
este envase no está destinado a ser usado en un autoclave, la tapa
formada enteramente de cartón revestido está unida por sus bordes a
la pestaña de reborde de la bandeja, sin protección de los bordes
sin desbarbar del cartón como se indica arriba.
La industria alimentaria fabrica también envases
de comida preparada, en los cuales la porción de bandeja actúa como
una bandeja de cocción en la etapa de cocer los alimentos. Se
disponen los alimentos en la bandeja en estado crudo, éstos son
cocidos a la temperatura de cocción y finalmente se cierra con una
tapa la bandeja que contiene los alimentos terminados y listos para
consumir. La bandeja de cocción puede estar hecha de aluminio o de
un plástico resistente al calor, o de cartón revestido de un
polímero cuya temperatura de fusión será suficientemente alta para
resistir a la temperatura de cocción del alimento sin que se
funda.
Sin embargo, la cocción de las bandejas de
comida preparada ha demostrado implicar el problema de la grasa
caliente que tiende a producir salpicaduras desde los alimentos
durante la cocción, terminando una parte de las salpicaduras encima
de la pestaña de reborde de la bandeja. La pestaña de reborde tiene
la función de actuar como una contrasuperficie para la tapa, la
cual está termosellada después de la cocción a fin de cerrar
herméticamente el envase. La grasa sobre la pestaña de reborde
dificulta el sellado, resultando en un riesgo de fugas a través del
precinto y causando una deterioración prematura de los
alimentos.
El objetivo de la invención consiste en aportar
una solución al problema antes mencionado, permitiendo unir una
bandeja de cocción provista de una pestaña de reborde, a su tapa de
cierre mediante un sellado hermético, sin causar problemas de
sellado ni de fugas debido a la grasa. El envase de comida preparada
de la invención, que resuelve el problema, se caracteriza porque
los alimentos son cocinados en una bandeja incluida en el envase, y
por los bordes de la tapa, por medio de los cuales se cierra la
bandeja después de la cocción, bordes que se pliegan debajo de la
pestaña de reborde de la bandeja y son termosellados sobre la
superficie inferior de la pestaña de reborde mediante un
revestimiento de polímero.
La superficie inferior de la pestaña de reborde
que, según la invención, actúa como una contrasuperficie durante el
termosellado de la tapa, forma una parte de la superficie exterior
de la bandeja y está situada en una zona muerta con respecto a las
salpicaduras que se esparcen desde la bandeja, de modo que no queda
expuesta de manera significativa a la contaminación de la grasa. En
otras palabras, la estanqueidad de la bandeja no está afectada por
la cocción de los alimentos contenidos en la bandeja. Además, al
estar doblado y sellado debajo de la pestaña de reborde de la
bandeja, el borde de la tapa quedará eficazmente protegido contra
las desgarros que puedan producirse en el borde durante la
manipulación y el transporte de los envases.
Según la invención, es posible sellar la tapa no
sólo en la superficie inferior de la pestaña de reborde, sino
también en la superficie superior de la pestaña de reborde de la
bandeja. Si bien, por las razones explicadas anteriormente, el
sellado de la superficie superior de la pestaña de reborde es menos
seguro que el sellado de su superficie inferior, esta realización
permite obtener un envase con dos líneas de sellado una dentro de
la otra, que tienen el efecto de unir aún más eficazmente la tapa al
envase.
En el envase de la invención, el revestimiento
de polímero sobre la superficie interior de la bandeja de cartón
puede consistir particularmente de poliésteres, tal como el
tereftalato de polietileno (PET), el cual resiste a las
temperaturas de cocción de los alimentos. Si es necesario, la
superficie exterior de la bandeja puede estar también revestida de
poliéster. En lugar de cartón, la bandeja podría estar hecha
enteramente de un polímero resistente a la temperatura de cocción,
tal como poliéster o aluminio. El revestimiento de polímero de la
superficie interior de la tapa que debe ser fijada después de la
etapa de cocción, está hecho preferiblemente de un polímero
termosellable, especialmente de poliéster o polipropeno. Un polímero
termosellable cuyo punto de fusión sea suficientemente alto permite
calentar el envase dentro de un horno o en un horno microondas
antes de consumir el alimento.
En el procedimiento de la invención para
fabricar un envase de comida preparada tal como el descrito arriba,
los alimentos se disponen en estado crudo en la bandeja de cartón,
luego son cocidos en la bandeja y después de la cocción, se cierra
la bandeja con una tapa, estando realizado el cierre, según la
invención, disponiendo sobre la abertura de la bandeja una hoja en
bruto de cartón procedente de un cartón revestido de polímero,
doblando los bordes de la hoja en bruto debajo de la pestaña de
reborde de la bandeja y finalmente termosellando los bordes de la
hoja en bruto sobre la superficie interior de la pestaña de reborde
de la bandeja mediante un revestimiento de polímero en el cartón.
La hoja en bruto de tapa puede estar provista de líneas de plegado
fruncidas, las cuales facilitan sustancialmente el plegado de los
bordes de la hoja en bruto.
El uso de la bandeja hecha de cartón revestido
de polímero de la invención comprende el uso de la bandeja como una
bandeja de cocción en la fabricación de envases de comida preparada,
cerrando la bandeja después de la cocción con una tapa hecha de
cartón revestido de polímero, doblando los bordes de la tapa debajo
de la pestaña de reborde de la bandeja, y termosellando los bordes
sobre la superficie inferior de la pestaña de reborde mediante el
revestimiento de polímero.
La invención se explica a continuación en más
detalle mediante ejemplos y con referencia a los dibujos anexos, en
los cuales:
la Figura 1 muestra una hoja en bruto de tapa,
que puede ser plegada y sellada para formar la tapa del envase de
comida preparada de la invención, tal como está ilustrado en la
figura 3,
la Figura 2 muestra una bandeja que puede ser
sellada en la tapa mostrada en la figura 1 para formar el envase
tal como se muestra en la figura 3,
la Figura 3 muestra un envase de comida
preparada de la invención, que consiste en una bandeja y en una tapa
de cierre termosellada, vista oblicuamente desde arriba,
la Figura 4 muestra el correspondiente lado
inferior del envase de la figura 3, y
la Figura 5 muestra el punto de unión entre la
bandeja y la tapa de cierre como una sección V-V de
la figura 3.
El envase de comida preparada 1 mostrado en las
figuras 3 y 4 puede formarse a partir de la bandeja 2 de la figura
2 y a partir de la tapa de cierre 4 formada a partir de una hoja en
bruto 3 mostrada en la figura 1. La bandeja 2 y la tapa 4 están
hechas de cartón de embalar revestido de polímero.
La abertura de la bandeja 2 es principalmente
rectangular y comprende una pestaña 6 de reborde horizontal
saliente, que rodea el reborde de la parte receptáculo 5 de la
bandeja. La hoja en bruto 3 de tapa está provista de muescas 7 que
actúan como líneas de fruncido y que dividen la hoja en bruto en una
zona central rectangular 8 dimensionada para corresponder a la
pestaña 6 de reborde de la bandeja 2, y en partes laterales 9 que
rodean este último.
Cuando la bandeja 2 de la figura 2 está cerrada
por la tapa 4 formada a partir de la hoja en bruto 3 de tapa de la
figura 1 para proporcionar el envase 1 ilustrado en las figuras 3 y
4, la zona central 8 de la hoja en bruto se posiciona de manera que
cubra la abertura de la bandeja y las superficies superiores 10 de
la pestaña 6 de reborde, y luego se doblan las partes laterales 9
de la hoja en bruto alrededor de los bordes de la pestaña de
reborde contra las superficies inferiores 11 de la pestaña. De este
modo, las partes laterales formarán los pliegues en las esquinas
del envase 1 mostrado en la figura 4, donde el material de tapa es
plegado en tres.
El material de la bandeja 2 es un cartón de
embalar provisto de una capa de revestimiento de poliéster 13, que
forma la superficie interior de la bandeja. La tapa 4 está hecha de
cartón de embalar, que está revestido de una capa de poliolefina
termosellable 14, que forma la superficie interior de la tapa en el
envase cerrado. La tapa 4, cuyo borde 9 está doblado como en la
figura 5 contra la superficie inferior 11 de la pestaña 6 de
reborde de la bandeja 2, ha sido termosellado mediante el
revestimiento termosellable 14, tanto en la superficie superior 10
como en el superficie inferior 11 de la pestaña, de manera que el
envase quedará cerrado por dos líneas de sellado 15 situadas una
dentro de la otra en lados opuestos de la pestaña.
El envase para comida preparada 1 está
fabricado, según la invención, estando los alimentos 16 dispuestos
en estado crudo en la bandeja abierta 2, donde los alimentos son
cocinados a la temperatura de cocción requerida sin cerrar la
bandeja. Después de la etapa de cocción, se cierra la bandeja 2 con
la tapa formada a partir de la hoja en bruto 3 mostrada en la
figura 1, doblando los bordes 9 de la hoja en bruto alrededor de la
pestaña 6 de reborde de la bandeja y sellando la tapa sobre las
superficies superior e inferior 10, 11 de la pestaña del modo
descrito arriba. Durante la cocción, la grasa de los alimentos puede
salpicar sobre la superficie superior de la pestaña 6 de reborde,
donde impedirá el termosellado de la superficie pero la línea de
sellado 15 sobre la superficie inferior 11 de la pestaña
garantizará un cierre hermético según la invención.
Será obvio para los expertos en la técnica que
las aplicaciones de la invención no están limitadas a la aplicación
dada como ejemplo anteriormente, sino que pueden variar dentro del
ámbito de las reivindicaciones siguientes. Por ejemplo, los
revestimientos de polímero 13, 14 de la bandeja 2 y de la tapa 4
pueden diferir de los mencionados anteriormente y, si se desea, las
superficies exteriores de la bandeja y de la tapa podrían estar
provistas también de un revestimiento de polímero. La bandeja 2
puede estar formada enteramente de polímero, tal como tereftalato
de polietileno, o de aluminio, en lugar de cartón revestido. También
se puede concebir sellar la tapa 4 sobre la pestaña 6 de reborde de
la bandeja únicamente en la superficie inferior 11 de la pestaña, y
luego omitir la línea de sellado en la superficie superior de la
pestaña, ya que ésta es menos trascendental para la estanqueidad
del envase.
Claims (9)
1. Envase de comida preparada (1), que consiste
en una bandeja (2) que contiene los alimentos envasados (16) y en
una tapa (4) que cierra la bandeja, y en el cual la tapa por lo
menos del envase está hecha de cartón revestido de polímero, en el
cual los alimentos (16) son cocidos en la bandeja (2) y
caracterizado porque los bordes (9) de la tapa (4), mediante
la cual la bandeja ha sido cerrada después de la cocción, son
plegados debajo de la pestaña de reborde (6) de la bandeja y son
termosellados en la superficie inferior (11) de la pestaña de
reborde mediante el revestimiento de polímero (14) de la tapa.
2. Envase de comida preparada según la
reivindicación 1, caracterizado porque la tapa (4) ha sido
además termosellada en la superficie superior (10) de la pestaña de
reborde (6) de la bandeja (2).
3. Envase de comida preparada según la
reivindicación 1 ó 2, caracterizado porque la superficie
interior (14) de la tapa (4) está hecha de polímero termosellable,
tal como poliéster.
4. Envase de comida preparada según una
cualquiera de las reivindicaciones anteriores, caracterizado
porque la bandeja (2) está hecha de cartón revestido de
polímero.
5. Envase de comida preparada según una
cualquiera de las reivindicaciones anteriores, caracterizado
porque la superficie interior (13) de la bandeja (2) está hecha de
polímero resistente al calor, tal como poliéster.
6. Procedimiento para fabricar un envase de
comida preparada (1) según una cualquiera de las reivindicaciones
anteriores, que comprende las fases de colocar los alimentos (16) en
estado crudo en una bandeja (2), en la cual los alimentos son
cocidos y, después de la cocción, de cerrar la bandeja con una tapa
(4), en el cual el cierre se realiza disponiendo una hoja en bruto
de tapa (3) cortada a partir de un cartón revestido de polímero,
sobre la boca de la bandeja (2), caracterizado por el plegado
de los bordes (9) de la hoja en bruto debajo de la pestaña de
reborde (6) de la bandeja, y por el termosellado de los bordes en la
superficie inferior (11) de la pestaña de reborde mediante el
revestimiento de polímero (14) del cartón.
7. Procedimiento según la reivindicación 6 ó 7,
caracterizado porque la tapa (4) está también termosellada
en la superficie superior (10) de la pestaña de reborde (6) de la
bandeja.
8. Procedimiento según la reivindicación 6,
caracterizado porque la hoja en bruto (3) de tapa comprende
líneas de plegado fruncidas (7), a lo largo de las cuales se
realiza el plegado de los bordes (9).
9. Uso de una bandeja hecha de cartón revestido
de polímero como bandeja de cocción en la fabricación de envases de
comida preparada, que comprende el cierre de la bandeja (2) después
de la cocción con una tapa (4) hecha de cartón revestido de
polímero, siendo plegados los bordes (9) de la tapa debajo de la
pestaña (6) de reborde de la bandeja mediante el revestimiento de
polímero (14).
