Abstract

Método para la producción de barras de pan rebanado sin corteza y dispositivo para su puesta en práctica.
Método para la producción de una barra de pan rebanado sin corteza a partir de una hogaza prismática rectangular de pan, comprendiendo dicho método: descortezado del pan mediante movimiento longitudinal de la barra pasada por hojas cortantes para eliminar la corteza de los cuatro lados de la hogaza de pan; rebanado de la barra sin corteza mediante el movimiento transversal de la hogaza pasada por una pluralidad de hojas cortantes para rebanar el pan; y empaquetado de la barra mediante el movimiento longitudinal de la barra a una zona de empaquetado.
