Abstract

Grupo refrigerador-calentador para fermentación controlada de artículos de panadería, que comprende un equipo de refrigeración y otro de calefacción eléctricos instalados en un armario o cámara con paredes de material oportuno y aisladas térmicamente, que contendrá la sustancia o masa a conservar en frío primero, y a calentar después para favorecer su fermentación, caracterizado por comprender un reloj programable, con lectura por dígitos luminosos, transistorizado y cuya salida está conectada a un conmutador que pone en servicio, alternativamente, uno u otro de dos relés que activan respectivamente el equipo refrigerador y el calentador y que van conectados por una parte al citado conmutador y por la otra a sendos sistemas reguladores de temperatura, todo ello alimentado por una adecuada etapa transformadora-rectificadora de corriente y operativamente dispuesto para que, al conectar el grupo, entre en funcionamiento el equipo refrigerador y para que, después de transcurrido el tiempo programado previamente en el reloj; el conmutador cambie la conexión al relé del equipo calentador.
