Abstract

Procedimiento para mejorar la estabilidad del sabor de soluciones biológicas fermentadas, tratándose como solución biológicamente fermentada de cerveza o bebidas similares a la cerveza, caracterizado por que se trata la solución biológicamente fermentada después de la fermentación en un instante en el que aún tiene lugar la formación de aroma, cada 100 litros con 1 a 3000 g de un polímero, que contiene el 50-99,5 % en peso de Nvinilimidazol y del 0 al 49,5 % en peso de otro monómero copolimerizable incorporado por polimerización y se produce con exclusión de oxígeno y de iniciadores de polimerización así como en presencia del 0,5 al 10 % en peso, con respecto a los monómeros, de un agente reticulante.
