Abstract

Producto semielaborado graso, procedimiento para su obtención y utilización del mismo en la industria alimentaria.#La invención se refiere a un producto semielaborado graso sólido o semisólido, a su procedimiento de obtención, así como a la utilización del mismo en la industria alimentaria como sustituto de grasas animales, con el fin de obtener productos alimenticios elaborados libres de grasas saturadas y de ácidos grasos trans de origen animal, por ejemplo para obtener productos alimenticios cárnicos, en hamburguesas, embutidos curados, salchichas y similares, productos de la industria de los cereales y derivados, por ejemplo pastelería industrial, etc., comprendiendo el producto semielaborado aceites vegetales insaturados no hidrogenados, proteínas vegetales, caseína y agua.
