Aparato electrónico (1) para el seguimiento de la vinificación que comprende un dispositivo de medición al menos, una unidad de procesamiento (4) de la señal producida por el o los dispositivos de medición y un chasis (6) que contiene dichas unidades, incluyendo dicho aparato un dispositivo de medición de densidad de un líquido que comprende una columna de medición (2) provista de un primer sensor de presión (3) colocado en pie de columna y de un medio de determinación de la altura del líquido en la columna de medición (2) y estando el vértice de la columna (2) provisto de un dispositivo de válvula anticontaminación (7) que contiene una solución acuosa de SO2 que permite neutralizar, durante la operación de vaciado de dicha columna (2), el oxígeno contenido en el aire exterior aspirado para evitar contaminar el mosto reinyectado en el medio del que se ha tomado.
