Abstract

Un método de preparación de una emulsión comestible que tiene uno de: un 50-60 % o menos en peso de aceite; del orden de un 55 % en peso o menos de aceite; y del orden de un 50 % o menos en peso de aceite; incluyendo el método las etapas de: a) proporcionar, sin orden particular alguno, ingredientes que incluyen aceite, agua, fibras insolubles y un emulsionante; b) mezclar dichos ingredientes para preparar una pre-emulsión; c) recuperar la pre-emulsión; y d) llevar a cabo la fase de homogeneización para homogeneizar la pre-emulsión con el fin de producir una emulsión comestible homogeneizada, caracterizado por que la pre-emulsión se somete a homogeneización a presiones dentro del intervalo de 750 bar a 1500 bar.
