Abstract

Procedimiento para obtener un producto enriquecido en proteínas partiendo de material proteínico que tiene un contenido acuoso del orden de 20% o mayor, que comprende someter el material proteínico a un tratamiento simultáneo de deshidratación y eliminación de grasa con un disolvente orgánico, o mezcla de disolventes, que es miscible con agua y que tiene un punto de ebullición inferior al del agua.
