Abstract
Recubrimiento comestible para la conservación de trozos de fruta, su proceso de fabricación y de aplicación, estando constituido el recubrimiento comestible por una solución acuosa que se aplica sobre los trozos de fruta recubriéndolos, donde la solución acuosa comprende una base polisacárida de carboximetilcelulosa, una fuente de calcio, un agente antioxidante y adicionalmente un agente antimicrobiano, y donde la carboximetilcelulosa presenta una viscosidad superior a 1.500 mPa.s y una baja concentración, de entre 0,025% a 1% en peso respecto del peso total de los componentes de la solución acuosa.
