Abstract

Procedimiento de refrigeración de una masa de producto alimentario contenida en un recinto de tipo mezcladora, amasadora, trituradora o incluso artesa, con la ayuda de un líquido criogénico inyectado en el seno de la masa de producto, en la parte baja del recinto, que se caracteriza por que se dispone además, en la parte alta del recinto, de un sistema de convección forzada, sistema de convección forzada constituido por ejemplo por un ventilador o un conjunto de ventiladores, o incluso por una turbina, permitiendo así utilizar el poder frigorífico de los gases fríos resultantes de la inyección baja del líquido criogénico.
