Abstract
Freeze-dried chicken meat, potato, leek or fruit pieces are protectively coated with neutral-tasting edible fat having a melting point of 15 DEG to 50 DEG C. and preferably in an amount 5% to 20% by weight of the product to be coated. The fat applied may contain anti-oxidants, aromatic substances and/or colouring substances. The pieces may be dipped in the molten fat, or it may be sprayed on to them in a pill-making machine or as they are tumbled down an inclined surface, e.g. the inside of a rotating drum, an upwardly-moving belt or a stepped jigging conveyer preferably having the spray directed primarily to the step edges by jigging or stationary sprinklers. A friability test using a free aluminium cylinder in a rotated container is described.
