Abstract
Procedimiento de producción de clara de huevo líquida, caracterizado porque comprende las siguientes etapas: - almacenamiento previo de los huevos durante un plazo de al menos 48 horas; - rotura de dichos huevos, y recuperación de la clara de huevo en una cuba; - introducción de una cantidad predeterminada de clara de huevo en un envase; - cierre estanco de dicho envase; - pasteurización de dicho envase, manteniéndolo a una temperatura de pasteurización comprendida entre 51 ºC y 53 °C, durante un periodo de pasteurización comprendido entre 2 y 5 h.
