Process for the manufacture of ellagic acid, characterized in that it consists of: - preparing a mixture of dilute aqueous solution of ellagitannin and of a hydrolysis agent of the group comprising strong bases and strong acids; -in hydrolyzing the expressed ellagitannin in said mixture by heating it to a temperature above about 60º; -in separating from the expressed hydrolyzed mixture a solid crude compound based on ellagic acid; - in forming a purified alkaline elagate by treatment of said compound, at least once, by means of an alkaline aqueous solution; - separating said elagate by eliminating the alkaline treatment liquid, at a pH at least equal to about 12; -in forming an ellagic acid by treatment of the expressed elagate by an aqueous acidic solution; -in separating the expressed ellagic acid by eliminating the acid treatment liquid, at a maximum pH equal to about 3.5; -in washing the indicated ellagic acid separated with an aqueous liquid and drying the purified ellagic acid obtained in this way.
