Abstract
A process for converting raw materials containing starch into products containing dextrose, comprising the steps of subjecting a mixture of water and raw starch material to the action of an amylase, at a temperature of from about 85 to about 90 for 25 to 45 minutes and at a pH of about 6.9 to about 7.7 to liquefy substantially all the starch in said raw starch material, cool the liquified starch solution to a temperature of about 59 to about 60, adjust the pH of said solution to a value of about 4.8 to about 5.1, add to said solution an amyloglucosidase which is substantially free of protease, lipase and transglucosidase activity and maintain the resulting mixture at a temperature of about 59 to about 60 for about 62 to about 96 hours (Machine-translation by Google Translate, not legally binding)
