Abstract
Cyclodextrins are prepared from a starch hydrolysate (as defined below) having a dextrose equivalent in the range 0À5-20, by conversion with cyclodextrin transglycosylase in an aqueous medium. The starch hydrolysate is obtained by enzymatic or acid hydrolysis of gelatinized starch, and may be converted at 40-60 C., at pH 5À5-7À5 using 100-1000 Tilden-Hudson units of enzyme per 100 g. of starch. The product may be separated by recrystallization or by complex formation with one of the following: p-cymene, tetra- or trichloroethylene benzene, carbon disulphide, toluene, hexane, cyclohexane, naphthalene, chloroform, carbon tetrachloride, bromobenzene, anthracene or thymol, whereby a precipitate forms. The complexing agent may be added during conversion to increase the product yield. Many starches are specified, including amylose and amylopectin.
