Abstract
Proteins are isolated from skimmed milk and from lactose serum obtained by precipitation of casein from skimmed milk by means of rennet or acid by a method comprising concentrating the liquid and optionally removing non- proteinaceous suspended matter from the liquid by means 16, passing the liquid through a column 2 of molecular sieve (defined) having a volume at least three times that of the liquid, at a velocity of 1 to 10 cm. per min., the liquid being uniformly distributed over the bed by ducts 7, and collecting the fraction of the liquid containing the major part of the proteins in one of receivers 12 and 13. The liquid may be forced through the column by water under pressure from line 15. The protein-containing fraction of the liquid may be detected by photometric, refractometric or electrical conductivity measurements made by means 9 and a servo mechanism may be used to operate valve 11 in response to the measurements. The " molecular sieve " may be polyacrylamide gel.
