Abstract

A composition suitable for preserving fish or a foodstuff derived therefrom, i.e. fish powder or meal, comprises a mixture of benzoic acid, propionic acid, a metal benzoate and a metal propionate, each of the metals, which may be the same or different, being magnesium or an alkali metal, and the amounts of the benzoate and propionate being such that an aqueous solution of the composition is buffered at a pH of below 7. The composition may be used as an aqueous solution for washing fish or the aqueous solution may be frozen and the fish stored therein.
