Process for the alcoholysis of an ethylene-vinylester interpolymer, in a reaction medium comprising a hydrocarbon solvent, a low-boiling alcohol and an alkaline or acid catalyst, in which the initial total water content of the medium is within of the order of 1 to 10,000 ppm, characterized in that it comprises regulating said water content throughout the reaction and during any successive reaction operations so that it does not vary by more than 50% of its initial content, to obtain a partially hydrolyzed interpolymer of ethylene vinylester having a predetermined residual content of vinylester.
