Abstract
Un método de clarificación de zumo de limón o similares, método que comprende tratar el zumo de limón a clarificar con enzimas pectolíticas producidas microbialmente en una cantidad que corresponde a una actividad pectolítica que comprende una actividad de pectinesterasa comprendida en el intervalo que va desde 5 PEU/kg de zumo hasta 75 PEU/kg de zumo y una actividad de poligalacturonasa comprendida en el intervalo que va desde 300 PGU7kg de zumo hasta 4500 PGU/kg de zumo, y sílice coloidad de una cantidad correspondiente a entre 0,45 y 3 g deSiO2 sólida/kg de zumo, en cualquier orden o simultáneamente, a una temperatura comprendida en el intervalo que va desde 10 a 50ºC, almacenar el zumo de limón así tratado durante un período comprendido en el intervalo de 10 minutos a 5 horas, separar el zumo almacenado así tratado del precipitado y recoger el zumo clarificado.
