Process for obtaining pepper paste formed into tapes for the filling of table olives, characterized in that it comprises the steps of: a) desalting the pepper until achieving a salt content close to zero, during a period of approximately 8 hours; b) liquefying the pepper by means of crushing and mixing operations, at a temperature of about 90º c; c) mix the liquid pepper with sodium alginate, refined garrofin gum, potassium sorbate and drinking water, for a period of approximately 7 minutes, until a homogeneous and dense mass is obtained; d) rest the mass resulting from the previous stage; e) forming the mass of tapes; and f) cutting the tapes to the desired width and length.
