Abstract

Perfeccionamientos introducidos en las máquinas inyectoras de salmuera en masas cárnicas, de las que generalmente se hallan constituidas por un pistón hidráulico encargado de aspirar salmuera y expulsarla hacia un cabezal inyector encargado de incorporarla, mediante agujas, a la carne, caracterizándose los perfeccionamientos porque mediante ellos el volumen de salmuera inyectada puede adaptarse a las necesidades de cada caso con tan sólo regular la carrera del referido pistón hidráulico, gracias a un dispositivo graduador apropiado, que actúa sobre el mismo, pero con la particularidad de que aunque varíe el caudal de la inyección la presión continua siendo la misma, manteniéndose ésta constante sea cual sea el recorrido del pistón, sobreentendiéndose que si se variase la aludida presión del grupo hidráulico también variaría la presión anteriormente aludida, de forma que siempre se cumpla que a presión constante del mentado grupo hidráulico, la presión de la inyección sea igualmente constante.
