Abstract
Un proceso para quitar la piel interior de segmentos de frutos cítricos en el que los segmentos de frutos cítricos se separan uno de otro, después los segmentos se tratan en agua caliente que tiene una temperatura de 90 a 100ºC, o vapor, durante 20-60 segundos, después se enfrían y sumergen en una solución alcalina acuosa que contiene (a) uno o más surfactantes iniónicos que tienen un valor EHL de desde 6 a 14 seleccionados a partir del grupo que consta de ésteres grasos de sorbitán y polioxietileno, ésteres grasos de sacarosa, ésteres grasos de sorbitán, ésteres grasos de glicerina y ésteres grasos de propilenglicol y (b) un ortofosfato o un metafosfato, para realizar por ello el tratamiento de remoción de la piel.
