Procedimiento para la preparación de zumo cítrico claro o turbio resistente a la floculización, caracterizado porque se trata zumo cítrico, turbio por naturaleza, con un valor pH inferior a 2,5 con una pectinasa del tipo de poligalacturonasa-pectinestarasa a una temperatura inferior a 30ºC hasta que resulte negativo el ensayo de alcohol sobre pectinasa, y después de la deposición, se decanta.
