Abstract

Procedimiento para preparar un producto de café que consiste en aglomerados de libre fluencia a base de partículas de café soluble y café tostado finamente molido, estando presente éste último en una cantidad de 2 a 20% en peso, basado en el peso de los dos constituyentes de café, y teniendo un tamaño de partícula tal que el 90% en peso del café molido pase por una malla de 75 micras, caracterizado porque comprende las etapas de: (a) pre-enfriar granos de café tostado a una temperatura inferior a -45ºC; (b) moler finamente los granos de café pre-enfriados, de manera que se preserve el caracter aromático de los mismos; © clasificar por aire el café tostado finamente molido que tienen el tamaño deseado de partícula y (d) mezclar el café tostado seleccionado con el café soluble, para formar gránulos aglomerados de café, según una técnica de aglomeración con vapor de agua.Process for preparing a coffee product consisting of free-flowing agglomerates of soluble coffee particles and finely ground roasted coffee, the latter being present in an amount of 2 to 20% by weight, based on the weight of the two constituents of coffee, and having a particle size such that 90% by weight of the ground coffee passes through a 75-micron mesh, characterized in that it comprises the steps of: (a) pre-cooling roasted coffee beans at a temperature below - 45ºC; (b) finely grinding the pre-cooled coffee beans, so as to preserve their aromatic character; © air classifying the finely ground roasted coffee having the desired particle size and (d) mixing the selected roasted coffee with the soluble coffee, to form agglomerated coffee granules, according to a steam agglomeration technique.
