Abstract

Procedimiento para preparar un producto que contiene proteínas, comprendiendo dicho procedimiento las etapas de: (a) proporcionar un material en partículas a base de almidón, que incluye o no una fuente de nitrogeno; (b) gelatinizar parcialmente el componente de almidón de dicho material, en presencia de agua, a un sustrato en partículas, compuesto por partículas que tienen todas las dimensiones globales menores que 3 mm (según se ha definido en la memoria); (c) añadir una fuente de nitrógeno, si la fuente de nitrógeno de la tapa (a) está ausente o es insuficiente, antes, durante o después de la etapa (b), mientras se mantiene el estado físico de dicho sustrato; (d) inocular dicho sustrato con al menos una cepa de hongo amilolítico; (e) incubar dicho sustrato inoculado, en presencia de oxígeno y humedad, hasta que sustancialmente todas las partículas de dicho sustrato y/o sus productos de degradación estén íntimamente unidos por una retícula de micelios; y (f) desnaturalizar los productosde l etapa (e), donde dicha fuente de nitrógeno es asimilable por dichas(s) cepa(s) de hongo, y está presente en una cantidad total que no es inhibidora y que es suficiente para permitir un crecimiento adecuado de micelios en la etapa (e), y, si dicha fuente de nitrógeno está en partículas, las partículas de dicha fuente de nitrógeno tienen todas las dimensiones globales menores que 2,5 mm (según se ha definido en la memoria).
