Horno o cuba para la cocción de jamones, lomos o carnes en general, contenidos en moldes, cajas o tripas, que comprende un recipiente de cierre hermético; y medios para la introducción en este recipiente de cierre hermético, de una vagoneta de carga de los moldes que contienen los jamones a cocer, caracterizado por el hecho de que comprende, en la porción de espacio superior a la pila de moldes, medios para el rociado de agua sobre estos últimos; medios aductores de agua a los medios rociadores desde la porción de espacio cercana al fondo del recipiente, donde este agua se recoge después de haber descendido lamiendo los moldes, para la realización de una circulación del agua en circuito cerrado durante toda la operación de cochura; medios calefactores del agua; medios para el control de la temperatura, y medios para la carga de una cantidad adecuada de agua y la descarga de la misma, respectivamente al inicio y al final de cada operación de cochura.
