Abstract

Procedimiento para la preparación de fructosa a partir de materia vegetal, caracterizado por poner en contacto materia vegetal triturada que contiene un polímero de fructosa, en un medio acuoso, con una enzima que hidroliza el polímero de fructosa y, después de separar la materia vegetal que queda, aislar de un modo usual la fructosa obtenida por conversión enzimática.
