LOS FRUTOS SE INTRODUCEN EN EL TANQUE DE FERMENTACION, AÑADIENDO SALMUERA CON UN PH COMPRENDIDO ENTRE 3 Y 7 UNIDADES Y UNA CONCENTRACION DE CLNA DE HASTA EL 14 POR 100.
