CONSISTE EN ELIMINAR POR EXTRACCION O CENTRIFUGACION LOS COMPONENTES GRASOS DE UNA SOLUCION ACUOSA DE ORIGEN ANIMAL AJUSTANDO EL PH Y LA TEMPERATURA DE SOLUCION, ELIMINANDO A CONTINUACION POR FILTRACION O CENTRIGUFACION EL SEDIMENTO FORMADO. A LA SOLUCION OBTENIDA SE AÑADE LA CANTIDAD PROPORCIONAL DE FERMENTOS DIGESTIVOS PARA PRODUCIR LA PROTEOSISIS, MANTENIENDO LA DIGESTION HASTA ALCANZAR EL GRADO DESEADO.
