Abstract
PROCEDIMIENTO PARA LA PREPARACION DE UN OLIGOMERO DE L-ACIDO AMINICO QUE CONTIENE RESIDUOS DE L-METIONINA. SE HACE REACCIONAR EN MEDIO ACUOSO, A PH COMPRENDIDO ENTRE 5 Y 7, UN ESTER DE METIONINA, NORMALMENTE ESTER METILICO Y, EVENTUALMENTE, DE UNO O VARIOS OTROS ACIDOS AMINICOS DEL GRUPO FORMADO POR ACIDO GLUTANICO, L-TRIPTOFANO, DL-TRIPTOFANO Y DL-TIROSINA, CON UNA TIOL-PROTEASA, A UNA TEMPERATURA EN LA QUE ESTA ES ACTIVA. SE AISLA POR ULTRAFILTRACION EL OLIGOMERO DEL L-ACIDO AMINICO FORMADO DEL MEDIO DE REACCION. LOS OLIGOMEROS CONSTITUIDOS TIENEN UNA LONGITUD DE CADENA MEDIA DE 8, Y TIENEN UN CONTENIDO DE L-METIONINA COMPRENDIDO ENTRE EL 60 Y EL 90 POR 100 EN PESO. SE USA COMO AGENTE PARA AUMETAR EL VALOR NUTRITIVO DE LOS ALIMENTOS POBRES EN METIONINA O COMO INTERMEDIARIO EN LA PRODUCCION DE L-METIONINA.
