LA CARNE FRESCA SE ADOBA EN HUMEDO A UNA TEMPERATURA INFERIOR A 20 C EN UNA SALMUERA DE ADOBO QUE, AL LADO DE SAL DE ADOBO DE NITRITO Y DEXTROSA, CONTIENE UN CULTIVO DE BACTERIAS EN UNA CANTIDAD DE 0,1 POR MIL, SIENDO DICHAS BACTERIAS FORMADORAS DE ACIDO LACTICO QUE SE MULTIPLICAN A TEMPERATURAS POR DEBAJO DE 12 C, EN UNA CONCENTRACION DE POR LO MENOS 20.000.000 DE GERMENES POR CADA MILIMETRO EN BASE DE CONGELACION A BAJA TEMPERATURA. LOS TROZOS DE CARNE SE SALAN EN SECO AL MENOS UNA VEZ CON SAL DE ADOBO DE NITRITO Y POR KILOGRAMO DE TROZO INDIVIDUAL, ALMACENANDOSE DURANTE MEDIO DIA EN RECIPIENTES Y FINALMENTE SECANDOSE DURANTE VARIAS SEMANAS.
