UN PROCEDIMIENTO PARA LA PREPARACION DE UN CONCENTRADO DE PROTEINAS VEGETALES HIDROLIZADAS.INICIALMENTE SE EXTRAE UN MATERIAL PROTEICO VEGETAL CON UN AGENTE DE EXTRACCION ACUOSO, PARA FORMAR UN EXTRACTO ACUOSO DE PROTEINAS. EL PH DEL EXTRACTO ACUOSO DE PROTEINAS SE AJUSTA DESPUES AL PUNTO ISOELECTRICO DE LAS PROTEINAS PARA PRECIPITAR LAS PROTEINAS. LAS PROTEINAS PRECIPITADAS SE TRANSFORMAN EN UNA SUSPENSION Y SE HIDROLIZAN ENZIMATICAMENTE PARA PRODUCIR UN NUMERO PREDETERMINADO DE GRUPOS TERMINALES AMINO DISPONIBLES, COMO SE DETERMINA POR REACCION DE FLUORESCAMINA CON DICHAS PROTEINAS.
