Abstract

The concd. sugar soln. is heated to a above 100 degrees C at superatmospheric pressure in the presence of an alkali (esp. NaOH) catalyst to partial caramelisation. An N-contg. cpd. is then added (esp. NH3) and the heating continued at carefully controlled temp. and pressure to the required product. The caramel is electrically amphoteric and may be used in high-alcohol drinks and some cosmetic liquids.
