Abstract

La présente invention concerne le domaine des sucres. Conformément à l'invention on sépare une ou plusieurs cétoses, comme par exemple le fructose, d'une solution d'un mélange de sucres contenant une ou plusieurs cétoses et un ou plusieurs aldoses, en mettant en contact cette solution avec un haut polymère insoluble présentant des groupements amine primaire pour enlever les aldoses de la phase liquide par liaison de ceux-ci audit haut polymère. La présente invention est notamment applicable pour séparer le fructose du glucose.
