Abstract

Ce gril, notamment pour la cuisson au charbon de bois, comprend une première grille composée de gouttières 6; les fentes il ménagées entre les gouttières et par où la fumée s'échappe sont coiffées à un certain écartement vertical 13 par les élements, d'une grille support destinée à porter le produit à griller. Ces éléments font tomber la graisse qui coule du produit dans les gouttières 6, de sorte que cette graisse ne tombe pas sur la braise 4, sur laquelle elle pourrait donner naissance à du benzopyrène ou à d'autres composés nocifs. Elle est au contraire recueillie par les gouttières 6, qui peuvent la diriger vers une rigole et un récipient collecteur. Le produit à griller est exposé au maximum à l'action de la fumée 5.
