Abstract
L'invention est relative à un aliment cuit au four comprenant un additif permettant d'éviter un ramollissement à cause d'humidité, caractérisé en ce que l'additif est un dérivé d'un hydrate de carbone modifié au moyen d'énergie thermique, d'une irradiation ou d'un composé chimique additionnel et qui est insoluble dans l'eau dans une proportion d'au moins 25 % en poids tout en étant susceptible de gonfler. Elle concerne également un procédé pour la préparation d'un tel aliment
