Abstract

Cuiseur rotatif pour la cuisson en continu à l'eau de produits alimentaires comprenant une enveloppe et une paroi interne hélicoïdale propre à déplaoer les produits à cuire. Les produits à cuire sont introduits à une extrémité du cuiseur, ou extrémité amont, et recueillis à l'extrémité opposée, ou extrémité aval, l'eau est introduite dans l'enveloppe du côté aval et s'échappe par l'extrémité amont après traversée de la paroi hélicoïdale grâce à des perforations que présente cette dernière, la partie de la paroi hélicoïdale du côté aval étant non perforée mais la partie de l'enveloppe en regard étant perforée pour permettre l'écoulement de l'eau entraînée avec le produit cuit, celui-ci étant ainsi recueilli à l'extrémité aval pratiquement sans être chargé d'eau.
