Abstract

The machine has a dough bowl (7) which rotates about a vertical axis and a driven mixer kneader tool (5) which projects into the dough bowl from above as far as the bottom and whose rotational axis (13) is arranged at an angle and eccentrically with respect to the rotational axis (6) of the dough bowl. The envelope of the mixer kneader tool consisting of at least one arm represents a roller-shaped body of rotation which is tangential to the wall of the dough bowl (7) over the entire height thereof. The rotational axis (13) of the kneader mixer tool (5) is arranged, at an angle ( alpha ) of from 15 DEG to 30 DEG with respect to the vertical, in a perpendicular plane which is at a distance from the centre of the dough bowl (7), which corresponds to from 0.9 to 1.1 times the radius (R) of the body of rotation formed by the envelope (15) of the kneader mixer tool (5) at the bottom of the dough bowl (7). This makes it possible, at any level of filling of the dough bowl (7), to knead satisfactorily doughs of very variable consistency.
