Abstract

La présente invention concerne l’utilisation d’un agent antioxydant pour stabiliser le safran et d’une composition comprenant du safran ou un extrait de Crocus sativus associé à au moins un tel agent antioxydant. Une telle composition est particulièrement utile pour limiter la dégradation des molécules présentes dans le safran, en particulier le safranal et les crocines.
