Abstract

Procédé de production de sucre à partir de betteraves Procédé de production de sucre à partir de betteraves (B), le procédé comprenant les étapes selon lesquelles on fournit au moins un lot de betteraves ; on réalise au moins une étape de pressage des betteraves de manière à extraire un jus sucré (Js1) ; on filtre le jus sucré à l’aide d’au moins une membrane filtrante (18); on concentre le jus sucré filtré (Jsf) par évaporation de manière à obtenir un jus filtré concentré (Jsfc) ayant une concentration en matière sèche supérieure à un seuil de concentration prédéterminé; on réalise une étape de cristallisation dans laquelle on chauffe le jus filtré concentré sous vide afin d’évaporer le liquide résiduel contenu dans le jus filtré concentré, la chauffe étant poursuivie jusqu’à obtenir un sucre cristallisé intégral (C) ayant un taux d’humidité compris entre 0% à 10%.
