Claims (15)
- Composition pour aliment ou boisson comprenant:(A) de 5% à 100% de phase grasse, la phase grasse comprenant:(i) de 5% à 95% d'ester d'acide gras de saccharose contenant au moins quatre groupes ester d'acide gras, chaque groupe acide gras comportant de 8 à 22 atomes de carbone, où l'ester d'acide gras de saccharose a une teneur en octaester d'au moins 75% et un indice d'iode compris entre 25 et 55, et où l'ester d'acide gras de saccharose présente, à 37,8°C (100°F):(a) une rhéologie plastique non newtonienne à 37,8°C (100°F) et en particulier une limite élastique d'au moins 15 N/m² (150 dynes/cm²), mais inférieure à 250 N/m² (2500 dynes/cm²), et une viscosité d'au moins 15 poise (1,5 Pa.s) à 37,8°C (100°F) au bout de 10 minutes de cisaillement constant à 10 sec⁻¹,(b) une stabilité liquide/solide d'au moins 50% à 37,8°C (100°F);(ii) où l'ester d'acide gras de saccharose constitue au plus 50% du total de la composition pour aliment ou boisson;(iii) de 5% à 95% de matière grasse de triglycéride; et(iv) de 0% à 50% d'autres ingrédients gras;(B) de 0% à 95% d'autres ingrédients pour aliment ou boisson; et(C) où la composition pour aliment ou boisson contient des composés de sapidité polaires ou de polarité intermédiaire, ou leurs mélanges, qui sont au moins légèrement solubles dans l'eau.
- Composition selon la revendication 1 comprenant de 15% à 80% de phase grasse et de 20% à 85% d'autres ingrédients pour aliments ou boissons.
- Composition selon la revendication 2 comprenant de 15% à 35% de phase grasse et de 65% à 85% d'autres ingrédients pour aliments ou boissons.
- Composition selon la revendication 1 dans laquelle la phase grasse comprend de 10% à 67% d'ester d'acide gras de saccharose et de 33% à 90% de matière grasse de triglycéride.
- Composition selon la revendication 4 dans laquelle la phase grasse comprend de 10% à 35% d'ester d'acide gras de saccharose et de 65% à 90% de matière grasse de triglycéride.
- Composition selon la revendication 1 dans laquelle le rapport de l'ester d'acide gras de saccharose à la matière grasse de triglycéride ne dépasse pas 2:1.
- Composition selon la revendication 6 dans laquelle le rapport de l'ester d'acide gras à la matière grasse de triglycéride ne dépasse pas 1:1.
- Composition selon la revendication 1 dans laquelle l'ester d'acide gras de saccharose a une teneur en octaester d'au moins 80%.
- Composition selon la revendication 8 dans laquelle l'ester d'acide gras de saccharose a une teneur en octaester d'au moins 85%.
- Composition selon la revendication 1 dans laquelle l'ester d'acide gras de saccharose constitue au plus 35% du total de la composition pour aliment ou boisson.
- Composition selon la revendication 10 dans laquelle l'ester d'acide gras de saccharose constitue de 3% à 15% du total de la composition pour aliment ou boisson.
- Composition selon la revendication 1 dans laquelle les composés de saveur ont un moment dipolaire supérieur à zéro, sont de polarité intermédiaire, et sont au moins légèrement solubles dans l'eau.
- Composition selon la revendication 12 dans laquelle les composés de saveur ont un moment dipolaire supérieur à zéro, sont très polaires et sont au moins légèrement solubles dans l'eau.
- Composition selon la revendication 1 comprenant en outre de 1% à 5% d'émulsifiant.
- Composition selon la revendication 14 comprenant de 1% à 3% d'émulsifiant.
