Abstract
Foam formation during beer brewing is reduced by dispersing a silicone antifoamant in the wort or the beer, this antifoam being subsequently eliminated by contacting the beer with an adsorbent. Pref. antifoamant is a dimethyl polysiloxane opt. used with SiO2. This reduces foaming during e.g. boiling, aeration and fermentation, making process simpler, preventing deterioration of the yeast, and enabling the brewing vessels to be more fully utilised as teh antifomant is removed from the beer, the beer reains its capacity to form a stable foam.
